This summer, while you’re chilling by the pool, cool off with a refreshing berry mojito! To me, summer brings back so many amazing memories – running barefoot through the backyard and cannonballing into the water, fishing with my dad, and eating fresh berries picked straight from the vine. These memories were the inspiration for this berry mojito summer cocktail.

During the warmer months (Texas really only has hot and cool seasons) you can find me sipping on something icy. I’m typically a whiskey kind of gal, but when it’s hot I want something crisp and refreshing. Last year, gin was my jam. This year, I think it’s going to be all about the rum… and the berries, of course.
- 1 handful blueberries
- 3 strawberries
- 3 sprigs of mint
- 2 oz. rum
- club soda
- Muddle the blueberries, 2 strawberries, and 2 sprigs of mint in the bottom of a glass.
- Add ice.
- Pour in rum.
- Top off with club soda.
- Add a strawberry and sprig of mint for a delicious garnish - or snack for later!
We have multiple family gatherings in the summer, so I can’t wait to whip these up for friends and family. It’s planting season in Texas – I wonder if I can twist my dad’s arm into planting a few strawberry plants for me. If anything is better than berry mojitos it’s berry mojitos with farm fresh berries.
I have a lot of plans to whip up fun party-centered treats this summer and this summer cocktail is just the beginning! I see a plethora of drinks, desserts, and ice creams in my future… can you tell the new year’s resolution has been tossed aside? 😉
